- Now open your chicken carefully with your knife and avoid cutting into the bird or the skin.
- When you have the chicken out, lay it in the crockpot over the veggies and pull the neck and giblets out of the interior cavity of the bird.
- Now take the 4 small pieces of butter and slide them under the skin of the chicken on the breast. Be careful and leave the skin intact so the butter stays there for crispy skin and moist chicken.
- Now sprinkle 1/2 the spice mixture over the chicken and rub it into the breast side and legs to cover the chicken well.
- Then pour the remaining spice mixture into the interior cavity of the chicken and rub it in evenly.
- Now pop that other 1/2 stick of butter into the same cavity.
