How to Cook Goose Breast: Preheat Temp

Preheat to 350 degrees and move your oven rack to its lowest position at this time.

- A 12-13 pound goose
- 2 teaspoons kosher or sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon ground mustard
- 1/2 teaspoon orange zest (we'll slice this orange in half later too and stuff it in the goose)

- A large roasting pan
- Sharp knife
- Large measuring cup
- Meat thermometer
- Aluminum foil
How to Cook Goose Breast: The Procedure
- Score the goose breast in a diamond pattern all over the fat layer being careful not to pierce the meat.
- Rub the spice mixture onto the goose and stuff the cut oranges from zesting into the inside of the goose.
- Place the goose in the oven and roast for two hours forty-five minutes.
- Drain the fat off, check the temp, and let rest if it has reached 375 degrees on the meat thermometer in the breast and thickest part of the leg.
- Slice thinly and serve.

Serve the goose breast with roast veggies or mashed potatoes for a traditional meal. Alternatively, make leftover sandwiches or salads out of the meat. You can also make potpies with the leftovers as well. Use the fat for roasting or frying veggies later.
