What You'll Need to Make Blueberry Muffins With Frozen Blueberries

Before you start gathering all the goods for the muffins take a sec to preheat your oven to 400 degrees.

Equipment:


  • A large mixing bowl
  • A big spoon
  • A twelve count muffin tin or two six-count muffin tins
  • Oven mitts
  • Kitchen timer
  • Cooling Rack
  • Cookie jar, storage container, or cookie tin of your choice

The Goodies:

  1. 2 cups of all purpose flour sifted
  2. 4 tablespoons of sugar
  3. 1/2 teaspoon of salt
  4. 1 egg lightly beaten
  5. 1 cup of milk
  6. 3 tablespoons of melted butter, margarine, or shortening
  7. 1 teaspoon of pumpkin pie spice or cinnamon, whichever you prefer 
  8. 3/4 of a cup of frozen blueberries, do not thaw before use

How to Make Blueberry Muffins With Frozen Blueberries

  1. Grease the muffin tin or line it with baking liners and preheat the oven if you haven't already.
  2. Melt the butter, margarine or shortening in a microwave-safe bowl on high for 30 seconds to 1 minute. Set aside. 
  3. Sift the flour into the mixing bowl. If you haven't got a sifter a colander will work just as well (if the slots or holes are small) if you're careful and tap it lightly against the side of your hand to sift straight into the bowl. 
  4. Add into the flour the sugar, salt, and cinnamon/pumpkin pie spice. Stir lightly. 
  5. Crack one egg into a separate disk and beat lightly. Add the egg, milk, and melted butter/shortening/margarine to the mix. 
  6. Add the blueberries and stir just until all ingredients are moistened. There will be lumps, that's ok as long as everything is wet. Lumps should be small, no clumps, please. :)
  7. Spoon the mix into the muffin cups filling them 1/2 to 3/4 full and bake for 20 to 25 minutes.
  8. If your oven has a track record of baking things unevenly then you'll want to turn the pan around halfway during cooking at the ten-minute mark. 
  9. Remove ovens from the oven carefully and allow to cool for 5 minutes in the pan. Then remove the muffins to the cooling rack and cool for an additional 15 minutes or until just warm to the touch. 
  10. Enjoy :)
I like to eat these muffins plain, with butter, a little cream cheese, or some homemade lemon curd. They're are great warm or cold and travel well in a lunch box too.
